- 2 cans white beans (cannellini or great northern), drained
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes (in oil), sliced
- 2 cups baby spinach
- 1/2 cup canned coconut milk (or heavy cream if not vegan)
- 1 tsp Italian seasoning
- Salt & black pepper to taste
- Fresh basil or parsley for garnish
