Ingredients

For the brownie base:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs

  • 1/2 cup all-purpose flour
  • 1/4 tsp salt

For the chocolate mousse:

  • 1 cup heavy whipping cream
  • 1/2 cup semi-sweet chocolate chips
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

For the ganache topping:

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

Step 1: Make the brownies
Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper. In a bowl, whisk together melted butter, sugar, eggs, and vanilla. Stir in cocoa powder, flour, and salt until just combined. Pour into the prepared pan and bake for 20–22 minutes. Let cool completely.

Step 2: Prepare the chocolate mousse
In a small saucepan, heat 1/2 cup of heavy cream until warm (not boiling). Pour over chocolate chips and let sit for 1 minute, then stir until smooth. Cool to room temperature. In a separate bowl, whip the remaining 1/2 cup cream with powdered sugar and vanilla until stiff peaks form. Gently fold the whipped cream into the cooled chocolate mixture. Spread mousse over the cooled brownie layer and refrigerate for 1 hour.

Step 3: Make the ganache
Warm the cream and pour over chocolate chips in a bowl. Let sit for 1 minute, then stir until glossy. Cool slightly, then pour over the mousse layer. Chill for another 30 minutes or until set.

Step 4: Slice and serve
Cut into squares and garnish with heart sprinkles or strawberries for that Valentine’s charm.
