Lemon Herb Grilled Chicken with Garlic Rice – A Fresh & Flavorful Meal

🍋 Ingredients:

For the chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

For the garlic rice:

  • 1 tablespoon butter
  • 2 garlic cloves, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • Pinch of salt

🥣 Instructions:

Serve grilled chicken slices over garlic rice. Garnish with parsley or extra lemon if desired.

In a bowl, mix olive oil, lemon juice, zest, oregano, garlic powder, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.

Heat a grill pan over medium-high heat. Grill chicken for 5–6 minutes per side until golden and cooked through. Let rest before slicing.

In a saucepan, melt butter and sauté garlic for 1 minute. Add rice and stir for 1 minute.

Pour in chicken broth, bring to a boil, then cover and simmer for 15 minutes or until liquid is absorbed.
