🥒 Ingredients:
- 3 medium zucchinis, sliced into rounds
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme
- Black pepper to taste
- 1/2 cup breadcrumbs (optional, for topping)
🥣 Instructions:
- Preheat oven to 375°F (190°C).
- Place zucchini slices in a colander, sprinkle with salt, and let sit 10–15 minutes to draw out moisture. Pat dry.
- In a skillet, heat olive oil and sauté onion and garlic until soft.
- In a bowl, mix zucchini, cooked onion/garlic, sour cream, mozzarella, Parmesan, thyme, and pepper.
- Transfer to a greased baking dish and top with breadcrumbs (optional).
- Bake uncovered for 25–30 minutes until golden and bubbly. Let rest before serving.
