For the Chicken:

  • 2 boneless, skinless chicken breasts
  • Juice of 1 lemon
  • Zest of ½ lemon
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt & pepper to taste

For the Spinach:

  • 2 cups fresh spinach
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Pinch of salt

  1. Marinate the chicken: In a bowl, combine lemon juice, zest, olive oil, garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for at least 20 minutes (or up to 2 hours).
  2. Cook the chicken: Heat a skillet over medium heat. Sear the chicken for 5–6 minutes on each side until golden and cooked through. Let rest and slice.
