📝 Ingredients

  • 300g fettuccine or spaghetti
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 2 tbsp flour
  • 1 ½ cups milk
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt & black pepper to taste
  • Optional: parsley and chili flakes for garnish

👨‍🍳 Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.
  2. In a pan, melt butter and sauté garlic for 1 minute.
  3. Add flour and whisk for 30 seconds to form a roux.
  4. Slowly add milk and cream while whisking. Let simmer until thickened.
  5. Stir in Parmesan cheese, season with salt and pepper.
  6. Toss in cooked pasta. Add reserved water to adjust consistency if needed.
  7. Garnish with parsley and a pinch of chili flakes before serving.
