- 2 boneless, skinless chicken breasts
- Salt & pepper to taste
- Β½ cup flour
- 2 eggs, beaten
- 1 cup breadcrumbs (panko for extra crunch)
- Β½ cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- Fresh basil or parsley for garnish

- Preheat oven to 200Β°C (400Β°F). Slice chicken breasts in half lengthwise to make 4 cutlets. Season with salt and pepper.
- Dredge each piece in flour, then dip into beaten eggs, and coat with breadcrumb-Parmesan mixture.
- Heat olive oil in a skillet over medium heat. Fry chicken until golden and crispy (2β3 mins per side).
- Place chicken in a baking dish. Spoon marinara sauce over each, top with mozzarella.
- Bake for 10β15 minutes until cheese is melted and bubbly.
- Garnish with fresh basil or parsley and serve hot with pasta or salad.
