For the pasta & sauce:
- 12 oz (340 g) rigatoni pasta
- 2 tbsp butter
- 3 cloves garlic (minced)
- 2 tbsp all-purpose flour
- 2 cups whole milk (warm)
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 cup shredded mozzarella
- 1 tsp Cajun seasoning
- ½ tsp smoked paprika
- Salt & pepper to taste
For garnish:
- Fresh parsley (chopped)
- Extra parmesan cheese

Instructions
- Cook rigatoni according to package directions in salted water until al dente. Drain and set aside.
- Pat steak tips dry and season generously with Cajun seasoning, salt, and pepper. Heat olive oil or butter in a skillet over medium-high heat. Sear steak tips for 2–3 minutes per side until browned but still juicy. Remove from skillet and rest.
- In a large saucepan, melt butter and sauté garlic until fragrant. Stir in flour and cook for 1 minute to form a roux.
