Cheesy Zucchini Casserole – A Comforting Low-Carb Bake!

🥒 Ingredients:

  • 3 medium zucchinis, sliced into rounds
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme
  • Black pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

🥣 Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Place zucchini slices in a colander, sprinkle with salt, and let sit 10–15 minutes to draw out moisture. Pat dry.
  3. In a skillet, heat olive oil and sauté onion and garlic until soft.
  4. In a bowl, mix zucchini, cooked onion/garlic, sour cream, mozzarella, Parmesan, thyme, and pepper.
  5. Transfer to a greased baking dish and top with breadcrumbs (optional).
  6. Bake uncovered for 25–30 minutes until golden and bubbly. Let rest before serving.
