Ingredients:

For the Crepes:

  • 1 scoop vanilla protein powder
  • 1/3 cup oat flour (or finely ground oats)
  • 1/2 cup egg whites
  • 1/3 cup unsweetened almond milk
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Cooking spray or a non-stick pan

For the Filling:

  • 2 tbsp Greek yogurt (vanilla or plain)
  • 1 tsp honey or maple syrup
  • 1/4 tsp cinnamon

Optional Topping (Cinnamon Roll Glaze):

  • 1 tbsp cream cheese (softened)
  • 1 tbsp almond milk
  • Sweetener to taste (stevia, monk fruit, or powdered sugar alternative)

Instructions:

  1. Make the Crepe Batter:
    In a bowl, whisk together protein powder, oat flour, egg whites, almond milk, cinnamon, vanilla, and salt until smooth.
  2. Cook the Crepes:
    Heat a non-stick skillet over medium heat. Spray lightly with cooking spray. Pour a small amount of batter and swirl to cover the pan. Cook for 1-2 minutes per side, until golden and easy to flip. Repeat until the batter is done.
  3. Prepare the Filling:
    Mix Greek yogurt, cinnamon, and sweetener of choice.
  4. Assemble:
