Ingredients
- 1 ½ cups Arborio rice
- 200g mushrooms, sliced
- 2 cups spinach
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup Parmesan cheese, grated
- 4 cups vegetable broth, warmed
- 2 tbsp butter
- 2 tbsp olive oil
Instructions
- Heat oil and butter in a pan, sauté onions, garlic, and mushrooms.
- Add Arborio rice, stirring to coat.
