Ingredients

  • 1 ½ cups Arborio rice
  • 200g mushrooms, sliced
  • 2 cups spinach
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • 4 cups vegetable broth, warmed
  • 2 tbsp butter
  • 2 tbsp olive oil

Instructions

  1. Heat oil and butter in a pan, sauté onions, garlic, and mushrooms.
  2. Add Arborio rice, stirring to coat.
  3. Slowly add warm broth, one ladle at a time, stirring until absorbed.
  4. When rice is creamy, stir in spinach and Parmesan.
