These cookies are soft, chewy, and great for breakfast on the go, a quick snack, or even dessert. Best of all, they’re egg-free, dairy-free, and can easily be made gluten-free—making them a clean treat everyone can enjoy.
Ingredients (Makes 12–15 cookies)
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup peanut butter (or almond butter)
- 1/4 cup mini dark chocolate chips or raisins (optional)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of salt

Instructions
- Preheat your oven:
Set your oven to 350°F (175°C) and line a baking sheet with parchment paper. - Mix the ingredients:
In a medium bowl, mash the bananas until smooth. Add in the oats, peanut butter, cinnamon, vanilla extract, and salt. Stir until well combined. Fold in chocolate chips or raisins if using. - Scoop and shape:
Drop spoonfuls of the mixture onto the prepared baking sheet. Flatten each one slightly with the back of a spoon or your fingers—they won’t spread much during baking. - Bake:
Bake for 12–15 minutes, or until the edges are lightly golden and the cookies are firm to the touch. - Cool and enjoy:
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy warm or store in an airtight container for up to 3 days.
These cookies are kid-friendly, great for meal prep, and perfect for using up those extra ripe bananas sitting on your counter.
