Ingredients
- 4–5 medium heirloom tomatoes (mixed colors and varieties)
- ½ small red onion, thinly sliced
- ¼ cup fresh basil leaves, torn
- 2 tbsp fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (or red wine vinegar)
- ½ tsp flaky sea salt
- ¼ tsp freshly ground black pepper
- Optional: ½ cup fresh mozzarella pearls or crumbled feta cheese

Instructions
