  • 1 cup cold sparkling water or beer
  • 1/2 cup extra flour (for dredging)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups oil for frying

  • 4 large potatoes
  • 1 tsp salt
  • 4 cups oil for frying
  • 1 lemon (cut into wedges)

Instructions

1. Prep the chips

Peel the potatoes and cut them into thick fries. Rinse them in cold water, then pat them dry really well.
Fry them once at medium heat for about 4–5 minutes until softened but not browned. Remove and let them rest.

2. Make the batter

In a bowl, mix the flour and baking powder. Slowly whisk in the cold sparkling water or beer until the batter is smooth. It should be thick enough to coat the fish.

3. Season the fish

Pat the fish dry with paper towels, then season with salt and pepper. Lightly coat each fillet in flour first — this helps the batter stick better.

4. Fry the fish

Dip each fillet into the batter, then carefully place it into hot oil. Fry for about 5–7 minutes until deep golden and crispy. Remove and place on paper towels or a wire rack.

5. Fry the chips again

Turn the heat up a bit and fry the chips a second time until golden brown and crispy. Sprinkle with salt right away.

6. Serve

Plate the crispy fish with hot chips, lemon wedges, and tartar sauce. Add a splash of malt vinegar if you like that classic British flavor.
