Naturally sweet, packed with nutrients, and incredibly easy to make, they’re ideal for busy days, post-workout fuel, or a guilt-free treat anytime.

Ingredients

  • 1 cup soft pitted dates
  • 1/2 cup almonds (or any nuts you prefer)
  • 1/2 cup walnuts or cashews
  • 2 tbsp peanut butter (or almond butter)
  • 1 tbsp chia seeds (optional)
  • 1 tbsp cocoa powder (optional for chocolate flavor)
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 2–3 tbsp shredded coconut (for coating, optional)

Instructions

  1. Prepare the ingredients
    If your dates are a bit dry, soak them in warm water for 5–10 minutes, then drain well.
  2. Blend the mixture
    In a food processor, add the nuts and pulse until they become a coarse crumb. Add the dates, peanut butter, vanilla extract, salt, and any optional ingredients like cocoa or chia seeds.
  3. Process until sticky
    Blend everything together until the mixture becomes sticky and holds together when pressed between your fingers.
  4. Shape into balls
    Scoop small portions and roll them into bite-sized balls using your hands.
  5. Coat (optional)
    Roll the balls in shredded coconut, cocoa powder, or crushed nuts for extra texture and flavor.
  6. Chill and serve
    Place the energy balls in the fridge for at least 20 minutes to firm up before serving.
