Princess Cake (Prinsesstårta): A Royal Swedish Delight
Few cakes are as elegant and enchanting as the Princess Cake, or Prinsesstårta, a beloved Swedish dessert that’s as beautiful as it is delicious. With its pastel green marzipan dome and delicate layers of sponge, custard, raspberry jam, and whipped cream, this cake feels like something out of a fairytale—and it tastes just as magical.
Originally created in the early 20th century for Swedish princesses, this cake quickly became a national favorite and is now enjoyed around the world. Though it may look intricate, the process can be broken down into manageable steps, making it a rewarding project for any baking enthusiast.
Ingredients:
For the Sponge Cake:
- 4 large eggs
- ¾ cup granulated sugar
- ¾ cup all-purpose flour
- 1 tsp baking powder
- 2 tbsp milk
For the Custard Filling:
- 1 ½ cups whole milk
- 4 egg yolks
- ¼ cup sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract
Other Layers:
- ¾ cup raspberry jam
- 2 cups heavy whipping cream
- 2 tbsp powdered sugar
- 8 oz green marzipan (plus a bit of pink for the rose)
- Powdered sugar, for dusting

Instructions:
- Bake the Sponge:
Preheat oven to 350°F (175°C). Beat eggs and sugar until pale and fluffy. Sift in flour and baking powder, fold gently, then add milk. Pour into a greased 9-inch springform pan and bake for 25–30 minutes. Cool completely. - Make the Custard:
Heat milk until steaming. In a bowl, whisk yolks, sugar, and cornstarch. Gradually whisk in hot milk, return to heat, and stir until thickened. Add vanilla and let cool. - Whip the Cream:
Beat cold heavy cream with powdered sugar until stiff peaks form. - Assemble:
Slice sponge into three even layers. Place the bottom layer on a cake board. Spread with jam and half the custard. Add the second layer and top with remaining custard and a dome of whipped cream. Place final sponge layer on top, shaping the dome. - Cover & Decorate:
Roll out marzipan into a thin circle and drape it over the cake. Trim edges and dust lightly with powdered sugar. Shape a pink marzipan rose for garnish.
