Shaved Brussels Sprout Salad

Crisp, refreshing, and surprisingly addictive, shaved Brussels sprout salad is a trending side dish you’ll crave daily. It’s crunchy, tangy, and subtly sweet—thanks to a mix of apples, dried cranberries, and a Dijon vinaigrette. A perfect make-ahead salad that gets better the longer it sits.

🛒 Ingredients:

  • 1 lb fresh Brussels sprouts
  • 1 apple (Honeycrisp or Fuji), thinly sliced
  • 1/3 cup dried cranberries or raisins
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup grated Parmesan
  • Juice of 1 lemon
Vinaigrette:
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt & pepper to taste

📝 Instructions:

  1. Prep the Brussels Sprouts: Trim the ends and use a mandoline or sharp knife to shave them thinly.
  2. Mix the Vinaigrette: In a small bowl, whisk olive oil, vinegar, mustard, honey, lemon juice, salt, and pepper.
  3. Assemble the Salad: In a large bowl, toss the shaved sprouts, apple slices, cranberries, nuts, and Parmesan. Drizzle the vinaigrette over and mix well.
  4. Chill Before Serving: Let the salad sit for 10–15 minutes to allow flavors to meld. Serve cold or at room temperature.

🌱 Tip:

Add grilled chicken or bacon for a heartier version.
