🛒 Ingredients:

  • 2 mahi mahi fillets (fresh or thawed if frozen)
  • 2 bell peppers (red and yellow), sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • Lime wedges and chopped cilantro (for garnish)
  • Warm tortillas for serving

📝 Instructions:

  1. Preheat Oven: Set oven to 400°F (200°C).
  2. Prepare the Veggies: On a baking sheet, toss the sliced peppers and onions with 1 tbsp olive oil and half the spices. Spread evenly.
  3. Season the Fish: Place the mahi mahi on the same sheet. Drizzle with remaining oil and sprinkle with the rest of the spices.

  5. Warm the Tortillas: Wrap tortillas in foil and heat in the oven during the last 5 minutes.
  6. Assemble the Fajitas: Slice the fish and serve in tortillas with the roasted veggies, a squeeze of lime, and cilantro.
