The Italian Salad Sandwich Recipe

The Italian Salad Sandwich is a delightful twist on the classic sandwich, packed with fresh ingredients, tangy flavors, and a crunchy texture. This sandwich features a medley of Italian-inspired ingredients, including marinated artichokes, olives, and fresh vegetables, all nestled between two slices of hearty bread. Perfect for a quick lunch or a light dinner, this sandwich offers a burst of Mediterranean flavors in every bite.

Ingredients
For the sandwich:

  • 2 slices hearty Italian bread (or ciabatta rolls)
  • 1/2 cup marinated artichoke hearts, chopped
  • 1/4 cup kalamata olives, pitted and chopped
  • 1/2 cucumber, thinly sliced
  • 1 small tomato, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup roasted red peppers, sliced
  • 1/2 cup fresh mozzarella cheese, sliced
  • 1 tablespoon olive tapenade (optional)
  • Fresh basil leaves
  • Salt and pepper to taste

For the dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare the Dressing
    In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, dried oregano, salt, and pepper. Adjust seasoning to taste, and set the dressing aside.
  2. Assemble the Sandwich
    Lay the slices of Italian bread on a flat surface. Drizzle a bit of the dressing on one side of each slice of bread. On one slice, layer the chopped marinated artichokes, kalamata olives, cucumber, tomato, red onion, and roasted red peppers. Add slices of fresh mozzarella cheese and a few fresh basil leaves for added flavor.
  3. Add the Final Touches
    If using, spread a thin layer of olive tapenade on the other slice of bread for an extra burst of Mediterranean flavor. Season with a pinch of salt and pepper.
  4. Close and Serve
    Place the second slice of bread on top, dressing side down, and press gently. Slice the sandwich in half and serve immediately.
