Creamy Garlic Tuscan Salmon – Rich, Flavorful & Ready in 20 Minutes!

🐟 Ingredients:

  • 4 salmon fillets (skin-on or skinless)
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup baby spinach
  • 1/2 cup sun-dried tomatoes (in oil), drained & chopped
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • Fresh parsley (for garnish)

🥣 Instructions:

  1. Season salmon fillets with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Sear the salmon 4–5 minutes per side until golden. Remove and set aside.
  3. In the same pan, add garlic and cook for 30 seconds. Add sun-dried tomatoes, then pour in the heavy cream.
  4. Stir in Parmesan and Italian seasoning. Let simmer until slightly thickened (2–3 minutes).
  5. Add spinach and stir until wilted.
  6. Return salmon to pan and spoon the creamy sauce over it. Cook for another 2 minutes.
  7. Garnish with parsley and serve with rice, mashed potatoes, or pasta.
