🌶️ Ingredients:
- 2 boneless, skinless chicken breasts (sliced)
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning (or more to taste)
- Salt & pepper
- 3 cloves garlic (minced)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 250g penne or fettuccine pasta (cooked & drained)
- 1/2 cup chicken broth
- 1 tbsp butter
- Fresh parsley (for garnish)
👨🍳 Instructions:
- Toss the chicken slices with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet and cook the chicken until browned and cooked through (about 6–7 minutes). Remove and set aside.
- In the same pan, melt butter and sauté garlic and sliced bell peppers until soft (3–4 minutes).
- Add heavy cream, Parmesan, and chicken broth. Simmer for 2–3 minutes until thickened slightly.
- Return chicken to the pan, then add the cooked pasta and toss to coat in the sauce.
- Simmer 2 more minutes and garnish with fresh parsley before serving hot.
