These Broccoli Cheddar Baked Potatoes are the ultimate comfort food combo — crispy baked potatoes topped with a creamy, cheesy broccoli sauce. They’re easy to prepare and perfect for a filling weeknight dinner or a hearty lunch.
Ingredients
- 4 large russet potatoes
- 1 ½ cups broccoli florets, chopped
- 1 tbsp butter
- 1 tbsp flour
- 1 cup milk
- 1 cup shredded cheddar cheese
- ¼ tsp garlic powder
- Salt and pepper to taste
- Olive oil for brushing

Instructions
- Preheat oven to 200°C (400°F). Prick potatoes with a fork, rub with olive oil, and bake for 45–60 minutes until soft inside and crisp outside.
- Steam broccoli until just tender, about 4–5 minutes.
- In a saucepan, melt butter and whisk in flour. Cook for 1 minute.
- Slowly add milk while whisking until thickened.
- Stir in cheddar cheese, garlic powder, salt, and pepper. Mix until smooth.
- Slice open each potato and fluff the inside. Top generously with steamed broccoli and cheese sauce.
- Optional: sprinkle extra cheese or herbs on top before serving.
