Broccoli Cheddar Baked Potatoes

These Broccoli Cheddar Baked Potatoes are the ultimate comfort food combo — crispy baked potatoes topped with a creamy, cheesy broccoli sauce. They’re easy to prepare and perfect for a filling weeknight dinner or a hearty lunch.


Ingredients

  • 4 large russet potatoes
  • 1 ½ cups broccoli florets, chopped
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat oven to 200°C (400°F). Prick potatoes with a fork, rub with olive oil, and bake for 45–60 minutes until soft inside and crisp outside.
  2. Steam broccoli until just tender, about 4–5 minutes.
  3. In a saucepan, melt butter and whisk in flour. Cook for 1 minute.
  4. Slowly add milk while whisking until thickened.
  5. Stir in cheddar cheese, garlic powder, salt, and pepper. Mix until smooth.
  6. Slice open each potato and fluff the inside. Top generously with steamed broccoli and cheese sauce.
  7. Optional: sprinkle extra cheese or herbs on top before serving.
