Prepare Chicken: Season chicken breasts with Italian seasoning, salt, and pepper.
Sear Chicken: Heat olive oil in a large skillet over medium heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
Make Sauce: In the same skillet, sauté garlic for 1 minute. Add cream, broth, and Parmesan. Stir until smooth.
Add Veggies: Stir in sun-dried tomatoes and spinach. Cook until spinach wilts.
Combine: Return chicken to skillet, spoon sauce over, and simmer 2 minutes.
