This Creamy Tuscan Chicken is rich, flavorful, and perfect for a comforting dinner. Tender chicken breasts are cooked in a creamy garlic Parmesan sauce with sun-dried tomatoes and spinach, making it a dish that feels indulgent yet simple enough for a weeknight.
Ingredients
- 4 boneless, skinless chicken breasts
- Salt & pepper, to taste
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 tsp Italian seasoning

Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5–6 minutes per side until golden and fully cooked. Remove and set aside.
- In the same skillet, sauté garlic for 1 minute. Add sun-dried tomatoes and cook for another minute.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and Italian seasoning until the sauce thickens slightly.
- Add spinach and cook until wilted.
- Return chicken to the skillet and coat with the creamy sauce.
- Serve hot with pasta, rice, or crusty bread.
