Ingredients

  • 4 large flour tortillas
  • 1 lb (450 g) ground beef
  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • ½ cup sliced pickles
  • ½ cup ketchup (or burger sauce of choice)
  • Optional: mustard, lettuce, or tomato slices for serving

Instructions

  1. Cook the beef – In a skillet, heat olive oil over medium heat. Add onion and cook until softened. Add ground beef, garlic powder, paprika, salt, and pepper. Cook until beef is browned, then drain excess fat.
  2. Assemble quesadillas – Lay out the tortillas. Spread a thin layer of ketchup (or burger sauce) on half of each tortilla. Top with cooked beef, pickles, and shredded cheese. Fold the tortillas in half.
  3. Cook until crispy – Heat a non-stick pan over medium heat. Cook each quesadilla for 2–3 minutes per side until golden brown and the cheese is melted.
  4. Slice and serve – Cut into wedges and serve warm with extra ketchup, mustard, or dipping sauces.

Notes

  • Use ground turkey or chicken for a lighter version.
  • Add jalapeños or hot sauce for a spicy kick.
  • For a Big Mac–style twist, add shredded lettuce and special sauce after cooking.
