This Avocado Egg Salad is the perfect twist on the classic. Creamy avocado replaces most of the mayo, giving you a healthy, flavorful boost with every bite. Great for sandwiches, wraps, or on its own with crackers!
✅ Ingredients:
- 6 hard-boiled eggs, peeled and chopped
- 1 ripe avocado
- 2 tbsp Greek yogurt or light mayo
- 1 tsp Dijon mustard
- 1 tbsp chopped fresh dill or parsley
- 1 tbsp lemon juice
- Salt and pepper to taste
- Optional: chopped red onion or celery for crunch

🥄 Instructions:
- In a bowl, mash the avocado with lemon juice, yogurt, mustard, salt, and pepper until smooth.
- Fold in chopped eggs and herbs.
- Add onion or celery if using.
- Chill for 10 minutes or serve immediately on toast, in lettuce wraps, or sandwiches.
