Avocado Egg Salad – Creamy, Fresh & Protein-Packed!

This Avocado Egg Salad is the perfect twist on the classic. Creamy avocado replaces most of the mayo, giving you a healthy, flavorful boost with every bite. Great for sandwiches, wraps, or on its own with crackers!


✅ Ingredients:

  • 6 hard-boiled eggs, peeled and chopped
  • 1 ripe avocado
  • 2 tbsp Greek yogurt or light mayo
  • 1 tsp Dijon mustard
  • 1 tbsp chopped fresh dill or parsley
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Optional: chopped red onion or celery for crunch

🥄 Instructions:

  1. In a bowl, mash the avocado with lemon juice, yogurt, mustard, salt, and pepper until smooth.
  2. Fold in chopped eggs and herbs.
  3. Add onion or celery if using.
  4. Chill for 10 minutes or serve immediately on toast, in lettuce wraps, or sandwiches.
