Ingredients:
- 2 large sweet potatoes
- 1 1/2 cups cooked shredded chicken
- 1/4 cup buffalo sauce (like Frank’s Red Hot)
- 2 tablespoons Greek yogurt or sour cream
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Chopped green onions (for garnish)
- Crumbled blue cheese or shredded mozzarella (optional)
🥣 Instructions:
- Preheat oven to 200°C (400°F). Wash and pierce sweet potatoes with a fork.
- Bake for 40–50 minutes until fork-tender. Let cool slightly.
- In a bowl, mix shredded chicken with buffalo sauce, yogurt, garlic powder, salt, and pepper.
- Slice sweet potatoes open lengthwise and fluff the inside with a fork.
- Stuff with the buffalo chicken mixture.
- Top with cheese if using and broil for 2–3 minutes until melty.
- Garnish with green onions and serve hot!
