Buffalo Chicken Stuffed Sweet Potatoes – Spicy, Creamy & Protein-Packed!

Ingredients:

  • 2 large sweet potatoes
  • 1 1/2 cups cooked shredded chicken
  • 1/4 cup buffalo sauce (like Frank’s Red Hot)
  • 2 tablespoons Greek yogurt or sour cream
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Crumbled blue cheese or shredded mozzarella (optional)

🥣 Instructions:

  1. Preheat oven to 200°C (400°F). Wash and pierce sweet potatoes with a fork.
  2. Bake for 40–50 minutes until fork-tender. Let cool slightly.
  3. In a bowl, mix shredded chicken with buffalo sauce, yogurt, garlic powder, salt, and pepper.
  4. Slice sweet potatoes open lengthwise and fluff the inside with a fork.
  5. Stuff with the buffalo chicken mixture.
  6. Top with cheese if using and broil for 2–3 minutes until melty.
  7. Garnish with green onions and serve hot!
