🥒 Ingredients:
- 4 medium zucchinis, thinly sliced
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 eggs
- 1/2 cup sour cream
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley (for garnish)
🥣 Instructions:
- Preheat oven to 190°C (375°F). Lightly grease a 9×9-inch baking dish.
- In a skillet, heat olive oil and sauté onion and garlic for 3–4 minutes. Set aside.
- In a large bowl, whisk eggs, sour cream, oregano, salt, and pepper.
- Stir in cooked onion/garlic, cheddar, mozzarella, and half of the Parmesan.
- Fold in zucchini slices until coated.
- Pour the mixture into the baking dish and smooth the top.
- Sprinkle remaining Parmesan on top.
- Bake for 30–35 minutes or until golden and bubbly.
- Let rest 5 minutes, garnish with parsley, and serve.
