Cheesy Baked Zucchini Casserole – Low-Carb & Loaded with Flavor!

🥒 Ingredients:

  • 4 medium zucchinis, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 eggs
  • 1/2 cup sour cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley (for garnish)

🥣 Instructions:

  1. Preheat oven to 190°C (375°F). Lightly grease a 9×9-inch baking dish.
  2. In a skillet, heat olive oil and sauté onion and garlic for 3–4 minutes. Set aside.
  3. In a large bowl, whisk eggs, sour cream, oregano, salt, and pepper.
  4. Stir in cooked onion/garlic, cheddar, mozzarella, and half of the Parmesan.
  5. Fold in zucchini slices until coated.
  6. Pour the mixture into the baking dish and smooth the top.
  7. Sprinkle remaining Parmesan on top.
  8. Bake for 30–35 minutes or until golden and bubbly.
  9. Let rest 5 minutes, garnish with parsley, and serve.
