Cheesy Garlic Mashed Potato Casserole

Ingredients:

  • 1.5 kg potatoes (peeled and cubed)
  • 4 cloves garlic (peeled)
  • 1/2 cup butter
  • 1/2 cup sour cream
  • 1/4 cup milk
  • Salt & pepper to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated parmesan
  • 2 tbsp chopped chives or parsley (optional)

👨‍🍳 Instructions:

  1. Boil potatoes and garlic in salted water until fork-tender. Drain well.
  2. Mash with butter, sour cream, milk, salt, and pepper.
  3. Stir in half of the cheddar cheese and all the parmesan.
  4. Transfer to a baking dish, sprinkle remaining cheddar on top.
  5. Bake at 200°C (400°F) for 15–20 minutes until golden and bubbly.
  6. Garnish with chopped chives and serve hot!
