🌶️ Ingredients

  • 1 tablespoon olive oil
  • 12 oz smoked sausage (andouille or kielbasa), sliced
  • 1/2 onion, diced
  • 1 bell pepper (red or green), sliced
  • 2–3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning (more to taste)
  • 8 oz penne or rotini pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Optional: chopped parsley or green onions for garnish

🍲 Instructions

  1. Heat oil in a large skillet over medium heat. Add sausage and cook until browned on both sides. Remove and set aside.
  2. In the same pan, sauté onion and bell pepper for 3–4 minutes until soft. Add garlic and Cajun seasoning, stir for 30 seconds.
  3. Add pasta, chicken broth, and cream. Bring to a boil, then reduce heat. Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
  4. Stir in Parmesan and return the sausage to the skillet. Simmer uncovered for a few more minutes to thicken the sauce.
  5. Taste and adjust seasoning. Garnish with parsley or green onions if desired, and serve hot!

🧄 Pro Tips

  • Want it spicier? Add a pinch of cayenne or hot sauce.
