🐟 Ingredients:
- 4 salmon fillets (skin-on or skinless)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup baby spinach
- 1/2 cup sun-dried tomatoes (in oil), drained & chopped
- 1 teaspoon Italian seasoning
- Salt & pepper to taste
- Fresh parsley (for garnish)
🥣 Instructions:
- Season salmon fillets with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Sear the salmon 4–5 minutes per side until golden. Remove and set aside.
- In the same pan, add garlic and cook for 30 seconds. Add sun-dried tomatoes, then pour in the heavy cream.
- Stir in Parmesan and Italian seasoning. Let simmer until slightly thickened (2–3 minutes).
- Add spinach and stir until wilted.
- Return salmon to pan and spoon the creamy sauce over it. Cook for another 2 minutes.
- Garnish with parsley and serve with rice, mashed potatoes, or pasta.
