Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt & pepper, to taste
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach leaves

👨‍🍳 Instructions:

  1. Prepare Chicken:
    Season chicken breasts with Italian seasoning, salt, and pepper.
  2. Sear Chicken:
    Heat olive oil in a large skillet over medium heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. Make Sauce:
    In the same skillet, sauté garlic for 1 minute. Add cream, broth, and Parmesan. Stir until smooth.
  4. Add Veggies:
    Stir in sun-dried tomatoes and spinach. Cook until spinach wilts.
  5. Combine:
    Return chicken to skillet, spoon sauce over, and simmer 2 minutes.
  6. Serve:
    Serve with pasta, mashed potatoes, or crusty bread.
