Ingredients:
- 4 chicken thighs (bone-in or boneless)
- 3 medium potatoes, diced
- 1/4 cup Dijon mustard
- 2 tablespoons honey
- 1 tablespoon whole grain mustard (optional)
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
🥣 Instructions:
- Preheat oven to 200°C (400°F).
- In a bowl, whisk Dijon mustard, honey, whole grain mustard, garlic, olive oil, paprika, salt, and pepper.
- Coat the chicken in half the marinade. Let rest while prepping the potatoes.
- In an oven-safe skillet, heat a bit of oil and sear the chicken on both sides until golden (about 3–4 min per side). Remove and set aside.
- In the same skillet, toss potatoes with the remaining marinade and cook for 5 minutes.
- Return chicken to the skillet, nestling it into the potatoes.
- Bake for 25–30 minutes, until chicken is cooked through and potatoes are tender.
- Garnish with parsley and serve hot.
