Honey Mustard Chicken & Potatoes – One-Pan Weeknight Wonder!

Ingredients:

  • 4 chicken thighs (bone-in or boneless)
  • 3 medium potatoes, diced
  • 1/4 cup Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon whole grain mustard (optional)
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

🥣 Instructions:

  1. Preheat oven to 200°C (400°F).
  2. In a bowl, whisk Dijon mustard, honey, whole grain mustard, garlic, olive oil, paprika, salt, and pepper.
  3. Coat the chicken in half the marinade. Let rest while prepping the potatoes.
  4. In an oven-safe skillet, heat a bit of oil and sear the chicken on both sides until golden (about 3–4 min per side). Remove and set aside.
  5. In the same skillet, toss potatoes with the remaining marinade and cook for 5 minutes.
  6. Return chicken to the skillet, nestling it into the potatoes.
  7. Bake for 25–30 minutes, until chicken is cooked through and potatoes are tender.
  8. Garnish with parsley and serve hot.
