- 1 cup rolled oats
- ¾ cup shredded wheat, crushed
- ¼ cup shredded coconut
- ½ cup chocolate chips
- ½ cup sugar
- Zest of 1 lemon
- 1 tsp vanilla extract
- 1/2 cup melted butter or oil (adjust by recipe)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix sugar with lemon zest and vanilla by hand to extract full aroma and flavor.
- Add rolled oats, crushed shredded wheat, coconut, and chocolate chips—mix thoroughly.
- Stir in melted butter or oil to bind. If needed, add a splash of milk or water for desired consistency.
- Scoop into cookie balls on a lined baking sheet.
- Bake for about 10–12 minutes, until edges are golden and centers slightly soft.
- Let cool briefly before serving—cookies firm up as they rest.
