One Pot Creamy Tuscan Chicken

🧾 Ingredients:

  • 2 large boneless skinless chicken breasts, halved lengthwise
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • ½ tsp Italian seasoning
  • ½ cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 1 cup fresh spinach

👨‍🍳 Instructions:

  1. Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat.
  2. Sear chicken until golden and cooked through (4–5 mins per side). Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds.
  4. Pour in chicken broth and scrape up any brown bits from the pan. Add heavy cream, parmesan, and Italian seasoning.
  5. Stir in sun-dried tomatoes and spinach. Let simmer for 2–3 minutes until the sauce thickens slightly.
  6. Return chicken to the pan, coat in sauce, and simmer for another 2 minutes. Serve warm.
