Creamy Tuscan Salmon Skillet

Ingredients:

  • 2 salmon fillets (skin-on or off)
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 2 garlic cloves (minced)
  • 1/2 cup cherry tomatoes (halved)
  • 1 cup baby spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp Italian seasoning
  • Optional: chopped parsley or basil for garnish

👨‍🍳 Instructions:

  1. Season salmon with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Cook salmon for 3–4 minutes on each side or until golden and flaky. Remove and set aside.
  3. In the same skillet, sauté garlic and cherry tomatoes until softened.
  4. Add spinach and stir until wilted.
  5. Pour in heavy cream, parmesan, and Italian seasoning. Simmer for 2–3 minutes.
  6. Return salmon to the pan and spoon sauce over it.
  7. Garnish and serve with rice, mashed potatoes, or crusty bread.
