Ingredients:
- 2 salmon fillets (skin-on or off)
- 1 tbsp olive oil
- Salt & pepper to taste
- 2 garlic cloves (minced)
- 1/2 cup cherry tomatoes (halved)
- 1 cup baby spinach
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/2 tsp Italian seasoning
- Optional: chopped parsley or basil for garnish
👨🍳 Instructions:
- Season salmon with salt and pepper.
- In a skillet, heat olive oil over medium heat. Cook salmon for 3–4 minutes on each side or until golden and flaky. Remove and set aside.
- In the same skillet, sauté garlic and cherry tomatoes until softened.
- Add spinach and stir until wilted.
- Pour in heavy cream, parmesan, and Italian seasoning. Simmer for 2–3 minutes.
- Return salmon to the pan and spoon sauce over it.
- Garnish and serve with rice, mashed potatoes, or crusty bread.
