Ingredients

  • 10 oz (280g) refrigerated cheese tortellini
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1/2 cup milk
  • Vegetable oil, for frying
  • Marinara or ranch, for dipping
  • Optional: chopped parsley or red pepper flakes for garnish

Instructions

Step 1: Cook the tortellini
Bring a pot of salted water to a boil and cook the tortellini according to package directions—usually about 3–4 minutes. Drain and let cool slightly. (Do not overcook or they’ll fall apart during frying.)

Step 2: Prep the coating station
In one bowl, whisk together eggs and milk. In a second bowl, combine breadcrumbs and Parmesan cheese.

Step 3: Coat the tortellini
Dip each cooked tortellini into the egg mixture, then roll in the breadcrumb-Parmesan mixture, pressing lightly to adhere. Place on a tray until ready to fry.

Step 4: Fry to perfection
