One-Pot Creamy Chicken and Rice

Ingredients:

  • 2 tablespoons olive oil
  • 2 chicken breasts, diced
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup long grain rice
  • 2 ¼ cups chicken broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup frozen peas
  • Salt & pepper to taste
  • Fresh parsley for garnish (optional)

👩‍🍳 Instructions:

  1. Cook Chicken:
    Heat olive oil in a large skillet or pot over medium heat. Add chicken, season with salt and pepper, and sauté until browned. Remove and set aside.
  2. Sauté Aromatics:
    In the same pot, add onions and garlic. Cook until softened, about 2–3 minutes.
  3. Add Rice & Broth:
    Stir in the rice, then pour in the chicken broth. Bring to a boil.
  4. Simmer:
    Reduce heat, cover, and simmer for 15–18 minutes, or until rice is cooked.
  5. Add Cream & Cheese:
    Stir in heavy cream, Parmesan, peas, and the cooked chicken. Simmer uncovered for another 3–5 minutes.
  6. Finish & Serve:
    Garnish with parsley and serve warm.
