There’s something timeless about carrot cake—the soft crumb, the cozy spices, and that rich, creamy topping. This sugar-free version keeps everything you love but skips the refined sugar, relying on natural sweetness and better-for-you ingredients.
Ingredients

Ingredients

For the cake:

  • 2 cups finely grated carrots
  • 2 cups almond flour (or whole wheat flour)
  • 3 large eggs
  • ½ cup unsweetened applesauce
  • ⅓ cup oil (coconut or olive oil)
  • ½ cup sugar-free sweetener (like stevia blend or erythritol)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1½ tsp baking powder
  • 1½ tsp ground cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ½ cup chopped walnuts (optional)

For the sugar-free frosting:

  • 200 g cream cheese (softened)
  • ¼ cup powdered sugar-free sweetener
  • 1 tsp vanilla extract
  • 2–3 tbsp heavy cream (for texture)

Directions

1. Prep your oven

Preheat to 180°C (350°F). Grease and line an 8-inch cake pan.

2. Mix wet ingredients

In a large bowl, whisk together eggs, applesauce, oil, sweetener, and vanilla until smooth.

3. Add dry ingredients

Stir in almond flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

4. Fold in carrots

Gently mix in the grated carrots and walnuts (if using).

5. Bake

Pour the batter into the pan and bake for 30–40 minutes, or until a toothpick comes out clean.

6. Cool completely

Let the cake cool before frosting—this keeps the frosting from melting.

Make the Frosting

Beat cream cheese, sugar-free sweetener, and vanilla until smooth. Add a little cream if needed for a spreadable texture.

Spread evenly over the cooled cake.
