Crispy Low-Carb Zucchini Fritters

Ingredients

  • 2 medium zucchini (grated)
  • 1 teaspoon salt (for draining moisture)
  • 1 large egg
  • ½ cup almond flour
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon baking powder
  • 2 tablespoons olive oil (for frying)

Instructions

Step 1: Prepare the zucchini
Grate the zucchini using a box grater. Place it in a bowl, sprinkle with salt, and let it sit for 10 minutes. This helps draw out excess moisture.

Step 2: Remove excess water
Transfer the zucchini to a clean kitchen towel and squeeze out as much liquid as possible. This step is key for crispy fritters.

Step 3: Make the batter
In a mixing bowl, combine the drained zucchini, egg, almond flour, Parmesan cheese, garlic, parsley, black pepper, paprika, and baking powder. Mix until well combined.

Step 4: Heat the pan
Heat olive oil in a skillet over medium heat.

Step 5: Cook the fritters
Scoop small portions of the mixture into the pan and flatten slightly with a spatula. Cook for 3–4 minutes on each side, or until golden brown and crispy.

Step 6: Drain and serve
Remove from the pan and place on paper towels to absorb excess oil. Serve warm with your favorite low-carb dip.
