Cook Chicken: Heat olive oil in a large skillet or pot over medium heat. Add chicken, season with salt and pepper, and sauté until browned. Remove and set aside.
Sauté Aromatics: In the same pot, add onions and garlic. Cook until softened, about 2–3 minutes.
Add Rice & Broth: Stir in the rice, then pour in the chicken broth. Bring to a boil.
Simmer: Reduce heat, cover, and simmer for 15–18 minutes, or until rice is cooked.
Add Cream & Cheese: Stir in heavy cream, Parmesan, peas, and the cooked chicken. Simmer uncovered for another 3–5 minutes.
Finish & Serve: Garnish with parsley and serve warm.
