Ingredients

  • 2 cups fresh dandelion petals (packed)
  • 3 cups water
  • ¾ cup sugar (or preferred low-sugar sweetener like coconut sugar)
  • 1 tablespoon lemon juice
  • Optional: a few drops of vanilla extract

Instructions

Begin by gently rinsing the dandelion petals to remove any dirt or small insects. Place them in a saucepan with the water and bring to a boil. Once boiling, reduce the heat and let it simmer for about 20–25 minutes to fully extract the floral flavor.

Remove from heat and allow the mixture to cool. Strain through a fine sieve or cheesecloth, pressing lightly to get all the liquid. Discard the petals.

Return the infused liquid to the pan and add the sugar and lemon juice. Stir until dissolved, then bring to a gentle simmer. Cook for 25–35 minutes, stirring occasionally, until it slightly thickens. Keep in mind that with less sugar, the syrup will be thinner than the traditional version.

Add vanilla if desired, then pour into sterilized jars and let it cool completely.
