Dandelion Syrup (Vegan Honey Alternative)

Ingredients

  • 2 cups fresh dandelion petals (packed)
  • 3 cups water
  • 1 ½ cups sugar (white or cane sugar)
  • 1 tablespoon lemon juice
  • Optional: 1 teaspoon vanilla extract

Instructions

Start by rinsing the dandelion petals gently to remove any dirt. Place them in a saucepan with the water and bring to a boil. Once boiling, reduce the heat and let it simmer for about 20–25 minutes to extract the flavor.

Remove from heat and allow it to cool. Strain the liquid through a fine sieve or cheesecloth, pressing the petals slightly to release all the infused liquid. Discard the petals.

Pour the liquid back into the pan, add the sugar and lemon juice, and stir well. Bring it to a low boil, then let it simmer for 30–40 minutes, stirring occasionally, until it thickens into a syrup.

If using vanilla, add it at the end for extra depth of flavor. Pour into sterilized jars and let cool completely.
