Crispy Low Sugar Baked Chicken Thighs

These crispy low sugar baked chicken thighs are juicy on the inside, golden on the outside, and packed with bold garlic herb flavor without relying on sugary marinades or heavy sauces. Oven baking creates perfectly crisp skin while keeping the chicken tender and flavorful, making this recipe ideal for weeknight dinners, meal prep, or family gatherings.

The seasoning blend combines smoked paprika, garlic, onion powder, and herbs to create a rich savory taste that pairs perfectly with roasted vegetables, salads, or cauliflower mash. Unlike many baked chicken recipes loaded with sweet barbecue sauces or honey glazes, this version stays low sugar while still delivering incredible flavor and texture.

Best of all, these chicken thighs are simple to prepare using everyday ingredients. Just season, bake, and enjoy a restaurant-style chicken dinner straight from your oven.

Ingredients

For the Chicken

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)

Garlic Herb Butter

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley

Instructions

Step 1

Preheat the oven to 425°F (220°C). Line a baking tray with parchment paper or lightly grease a baking dish.

Step 2

Pat the chicken thighs dry using paper towels. Dry skin helps create a crispy texture while baking.

Step 3

In a small bowl, mix together smoked paprika, garlic powder, onion powder, Italian seasoning, thyme, salt, black pepper, and cayenne pepper.

Step 4

Rub olive oil all over the chicken thighs. Sprinkle the seasoning mixture evenly on both sides of the chicken.

Step 5

Place the chicken thighs skin-side up on the prepared baking tray. Bake for 35 to 40 minutes until the skin becomes crispy and golden brown.

Step 6

While the chicken bakes, melt butter in a small pan over low heat. Stir in minced garlic and parsley.

Step 7

Brush the garlic herb butter over the hot baked chicken thighs during the last 5 minutes of cooking.

Step 8

Check that the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before serving.
