Dandelion Sugar Cookies (No Sugar – Soft & Unique)

These no-sugar dandelion cookies are a healthier twist on a unique classic. Still soft, lightly floral, and comforting, they use natural sweeteners instead of refined sugar—making them perfect for anyone reducing sugar intake without sacrificing flavor. The delicate taste of dandelion petals pairs beautifully with gentle sweetness, creating cookies that feel both wholesome and special.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered erythritol or monk fruit sweetener (or other sugar-free sweetener)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 2 tablespoons fresh dandelion petals (yellow parts only, rinsed and dried)
  • 2 cups all-purpose flour (or almond flour for a lower-carb version)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2–3 tablespoons milk or unsweetened almond milk (as needed)

Instructions

  1. Prepare the Dandelion Petals
    Pick fresh dandelion flowers from a safe, pesticide-free area. Remove only the yellow petals and discard the green base to avoid bitterness. Rinse gently and dry thoroughly.
  2. Cream the Butter and Sweetener
    In a mixing bowl, beat the softened butter with the sugar-free sweetener until smooth and fluffy. This step helps create that soft cookie texture, even without traditional sugar.
  3. Add Wet Ingredients
    Mix in the egg, vanilla extract, and almond extract. Beat until the mixture becomes creamy and well combined.
  4. Fold in Dandelion Petals
    Gently stir in the dandelion petals so they are evenly distributed throughout the dough.
  5. Combine Dry Ingredients
    In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing just until a dough forms.
  6. Adjust Dough Texture
    Sugar-free doughs can be slightly drier, so add milk one tablespoon at a time until the dough is soft and workable.
  7. Chill the Dough (Recommended)
    Cover and refrigerate the dough for about 30 minutes. This helps improve texture and prevents spreading.
  8. Shape and Bake
    Preheat oven to 180°C (350°F). Scoop dough into small balls and place them on a lined baking sheet. Flatten slightly with your hand.
  9. Bake Gently
    Bake for 10–12 minutes. Since there’s no sugar to caramelize, the cookies may not brown much—look for lightly set edges and a soft center.
  10. Cool Before Serving
    Let cookies cool on the tray for a few minutes, then transfer to a rack. They will firm up slightly while staying soft inside.

Tips for Best Results

  • Powdered sweeteners work best to avoid a gritty texture.
  • If using almond flour, expect a more delicate, slightly crumbly cookie.
  • Add a pinch of lemon zest for a fresh flavor that complements the dandelion.
  • Store in an airtight container to keep them soft.
