No Sugar Healthy Chicken Caprese Flatbread

This chicken Caprese flatbread is a fresh, vibrant meal that feels indulgent while staying completely free of added sugar. Ingredients

For the flatbread base:

  • 2 whole wheat or low-carb flatbreads
  • 1 tablespoon olive oil

For the topping:

  • 1 ½ cups cooked chicken breast (sliced or shredded)
  • 1 cup fresh mozzarella (sliced or shredded)
  • 1 cup cherry tomatoes (halved)
  • 2 tablespoons tomato paste (no added sugar)
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

For finishing:

  • Fresh basil leaves
  • 1 tablespoon balsamic vinegar (no added sugar or reduced glaze)
  • 1 teaspoon olive oil

Instructions

Step 1: Preheat the oven
Preheat your oven to 400°F (200°C). Place the flatbreads on a baking tray lined with parchment paper.

Step 2: Prepare the base
Lightly brush each flatbread with olive oil. Spread a thin layer of tomato paste evenly across the surface.

Step 3: Add the toppings
Layer the cooked chicken evenly over the flatbread. Add mozzarella slices, then scatter the cherry tomatoes on top. Sprinkle oregano, garlic powder, salt, and black pepper.

Step 4: Bake
Bake for 10–12 minutes, or until the cheese is melted and the edges of the flatbread are crisp and golden.

Step 5: Finish with fresh flavors
Remove from the oven and top with fresh basil leaves. Drizzle lightly with balsamic vinegar and a touch of olive oil.
