Chicken stew is a comforting, hearty dish that’s perfect for a chilly evening. This version is packed with tender chicken, vegetables, and a flavorful broth, making it a wholesome and satisfying meal.

Ingredients:

•   2 lbs chicken thighs (bone-in or boneless)
•   1 tablespoon olive oil
•   1 onion, chopped
•   3 cloves garlic, minced
•   3 carrots, sliced
•   2 potatoes, diced
•   1 celery stalk, chopped
•   4 cups chicken broth
•   1 cup diced tomatoes (canned or fresh)
•   1 teaspoon thyme
•   ½ teaspoon rosemary
•   ½ teaspoon paprika
•   ½ teaspoon salt
•   ¼ teaspoon black pepper
•   1 bay leaf
•   ½ cup frozen peas (optional)
•   Fresh parsley for garnish

Instructions:

1.  Sear the chicken: In a large pot, heat the olive oil over medium heat. Add the chicken thighs and cook for about 5 minutes per side until browned. Remove and set aside.
2.  Sauté the vegetables: In the same pot, add the onions, garlic, carrots, potatoes, and celery. Cook for about 5 minutes until slightly softened.
3.  Simmer the stew: Return the chicken to the pot. Add the chicken broth, diced tomatoes, thyme, rosemary, paprika, salt, black pepper, and bay leaf. Bring to a boil, then reduce heat to low and let simmer for 30–40 minutes, until the chicken is tender.
4.  Final touches: Remove the chicken, shred it, and return it to the pot. Stir in the frozen peas and cook for another 5 minutes.
5.  Serve: Remove the bay leaf, garnish with fresh parsley, and enjoy your warm, hearty chicken stew.
