Healthy Peanut Butter Cookies: Soft, Sweet, and Guilt-Free Goodness

Ingredients:

  • 1 cup natural peanut butter (just peanuts + salt)
  • 1/3 cup honey or pure maple syrup
  • 1 egg
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • Pinch of salt (if peanut butter is unsalted)
  • Optional: dark chocolate chips, cinnamon, or chopped peanuts

Instructions:

Step 1: Preheat and Prep

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2: Mix the Dough

In a mixing bowl, combine the peanut butter, honey (or maple syrup), egg, baking soda, vanilla, and a pinch of salt if needed. Stir well until a smooth, thick dough forms. If you’re adding chocolate chips or mix-ins, fold them in now.

Step 3: Scoop and Shape

Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on your prepared baking sheet about 2 inches apart.

Step 4: Bake
